Copper River Restaurant & Bar

Had a great experience at Copper River. We took my parents for dinner. They don't eat out, and so we wanted a great restaurant for them to experience. I had reserved a table, but arrived 30 minutes early. We were seated immediately. The server was patient with the challenges of our group, and did an excellent job. We all had salads as appetizers. I was surprised at the length of the wait for the salads to be delivered. The dressing was minimal, and the salads tasted good. We enjoyed the Waygu Burger and Stuffed Salmon. The serving size of the salmon was smaller than expected, but the flavor was excellent. My wife ordered the burger "well-done", but it showed up with pink in the middle. The burger was pretty tall, making it a challenge to eat. But it was delicious. Overall, it was a great experience, and the food and prices make it absolutely worth a return visit.

I was pleasantly surprised with this lovely restaurant. A couple of things that stood out was their exceptional hospitality. The second was the delicious food and generous portions. I recommend this delightful place anytime..

Copper River in Hillsboro is a fantastic spot for a relaxed, flavorful meal with a great atmosphere. The beer selection is impressive — plenty of local and craft options to choose from, perfect for pairing with their wide range of dishes. The appetizers were delicious, especially the ones we shared at the table — fresh, flavorful, and served hot. But the real standout was the jambalaya — packed with bold Cajun flavor, just the right amount of spice, and loaded with hearty ingredients. Highly recommend it! The wait staff was awesome — friendly, attentive, and genuinely made us feel welcome without being overbearing. It’s the kind of service that really makes a difference.

Amazing experience and so many beers on tap! If you want tontry something new, the beer flight is a perfect option. Found 3 new beers to enjoy so i dont ahve to always order the same old one I do. I like the Kolsch quite a bit. And have ordered it a few times now. Very consistent meals and experience. Love this place!

This restaurant is an unassuming gem! I saw how busy it was and thought there'd be a long wait, but it was actually only around ten minutes. After being seated, my wife and I were greeted by our waiter promptly who brought us drinks and a fantastic appetizer (spinach artichoke dip) first thing. The entrees were similarly amazing, if not better (filet mignon and lobster fettuccine). The fettuccine sauce was creamy and savory, paired with a generous portion of perfectly tender lobster. I was especially impressed by the customer service, with extremely respectful staff making sure our experience was going well. A great recommendation for any time of day!

We looked up a place to have Brunch before heading to Next Level to play games and found Copper River not knowing it was their first day serving Brunch. The food and drinks were delicious. Had the Copper River breakfast, breakfast burger along with the scratch made cinnamon roll. Not only was the food amazing the service was perfect.

Place was packed on New Year’s eve, wife and I found a table in the bar area and were served pretty quick. I had chicken masala with mashed potatoes and vegetables my wife had a salmon salad. 50 Beer Choices on Tap This was our first time in and our experience was 5 STARS ⭐ ⭐⭐⭐⭐

Great place, awesome variety of food, and everything I’ve had there is at least decent. The burgers are great, steelhead is delicious. Ribeye is so-so.
